It\u00b4s one of the most impressive autumn landscapes in the inland of the province of Malaga. In this time of the year\u00a0the mountains get covered in brown, yellow and orange chestnut leaves.\u00a0The villages\u00a0Alpandeire,\u00a0Benalaur\u00eda, Cartajima,\u00a0Faraj\u00e1n,\u00a0Genalguacil,\u00a0Igualeja, Jubrique,\u00a0 J\u00fazcar,\u00a0Parauta, Pujerra\u00a0and\u00a0Yunquera belong to this area and they are well worth a visit.<\/div>\n<\/div>\n<h2 class=\"mc-toc-title\" data-fontsize=\"18\" data-lineheight=\"27\">Autumn Wine &amp; Dine<\/h2>\n<p>Try to cook a traditional Andalusian winter plate!<\/p>\n<p><strong>RABO DE TORO (OXTAIL) 4 pers.<\/strong><br \/>\nWine recommendation:\u00a0<strong>Muga Selecci\u00f3n especial 2014\u00a0<\/strong><\/p>\n<p>A popular plate in Autumn and Winter in Andalusia is the <em>Rabo de toro\u00a0stew<\/em>, the perfect winter-warmer after a day out\u00a0hiking.<\/p>\n<h3><strong>INGREDIENTS:<\/strong><\/h3>\n<ul>\n<li>2 kgs of oxtail, cut into regular-sized pieces<\/li>\n<li>3 leeks, sliced<\/li>\n<li>4 onions, sliced<\/li>\n<li>4 carrots, sliced<\/li>\n<li>4 cloves of garlic, peeled but left whole<\/li>\n<li>Half a litre of broth\/stock<\/li>\n<li>1 litre of red wine<\/li>\n<li>2 bay leaves<\/li>\n<li>2 cloves<\/li>\n<li>Salt and pepper<\/li>\n<li>2 tablespoons of flour<\/li>\n<\/ul>\n<h3><strong>PREPARATION:<\/strong><\/h3>\n<p>Wash the oxtail pieces, season with salt and pepper, and coat with flour. Heat the olive oil in a large pan and gently fry the oxtail until it is well-browned on all sides. Remove from the pan and keep to one side. Lightly saute the vegetables and garlic in the same pan, then add the bay leaves and cloves. Place all of the cooked ingredients, including the oxtail, into a large saucepan or casserole with a lid, cover with the wine and leave to simmer gently for at least 2 hours, until the meat easily separates from the bone.
